Yes and No.
There is a list on the DVLA website, of cars you can't take your test in, and features which it must have or signed recall fix evidence etc.
These include Head restraints, and a second mirror for the examinor. But you can check with your local test office.

I wanted to use my mini but it didn't have a passenger head rest. You do not need a head rest for the driver's seat only the passenger's.
Also if you pass your test then you can not drive your car away from the test centre legally. Your insurance is for a learner driver. Once you have passed your test you are no longer a learner driver and so you policy won't be valid. You need to ring up your insurance company and tell them you have passed before driving the car again. They shouldn't charge you anything for the change but some companies try and do so. This is the reason why if you do your test with an instructor's car and pass then they drive you back to where ever they picked you up. Their insurance only covers a learner driver.
Good luck with the test

Well the mini don't come up on recall list so its okay
and
Convertible vehicles
Some convertible vehicles are unsuitable for the driving test because of the lack of all-round vision for the examiner.
Unsuitable vehicles include:
Ford KA convertible = Fail!
BMW Mini convertible = FAIL!
VW Beetle convertible = LOSER!
If you want to use a convertible vehicle for the driving test please check its suitability when you book.
some cars shouldn't be converable and them 3 are deffo it

I think you may want to read the list of requirements again. It says you require a second interior mirror. You do not need a passenger side wing mirror (good to have it). Most driving instructor cars have two additional mirrors stuck to the windscreen. One is to act as a rear view mirror for the examiner, the other is pointed towards you so they can see if you are turning you head to look at your rear view mirror.
