Whilst I know that stamping your VIN number back onto your new scuttle panel is illegal in the UK, that apparently isn't so here in Poland as long as it's done through an authorised garage. My question is, does anyone know what size the letter/number stamps are and where is the best place to buy a set?

Same here, it's not illegal but needs to be done by the right people under permission from the DVLA.
You won't be able to buy a set of genuine VIN stamps. Your best bet is to go to one of the authorised garages, they will presumably have the stamps.

I doubt there are strict rules on exact size of the letter stamps.........just use some that are easily available and fit within the scuttle panel rain channel. Keep the old panel section for future reference.

Aren't there other locations on the body where VIN is stamped. I thought I heard that late models had VINs stamped in at least two locations.
