I know there are many threads on changing from offset to central but how easy is it to do the opposite? Is it plug and play or do you need to change the wiring?

You will need the extend the wiring and this would then require the multi plug on the end to connect. You will also need to change the speedo cable as these are not only longer but also have a differant connection on the back. If you are running the 3 clocks (speedo oil + water) you will need to retain the oil pressure gauge somewhere or fit a sender unit in its place as there is no oil pressure gauge in the 2 or 3 clock offset unit. If you plan to run a Rover (MPI Looking) dash then these were often fitted with additional gauges.
