what does a catalytic convertors do

They basically contain catalysts (platinum i think) that break down the unburnt hydrocarbons in exhaust emissions and turn it into water and CO2(i think). They basically reduce the exhaust emmissions from about 3.5% CO in non cat cars to less than 0.5% in cat cars. They are very expensive (compared to a standard mini exhaust system) and don't benefit the car particually, they just 'save the environment'.
Am not sure exactly how they work but theres a start...

They also reduce power.
Lots of Scoobys and other cars are de-catted.

I don't know if it is that simple.
If you take the cat out then what would happen the lambada sensor? And how would that effect fuel managment system?

You should just be able to take the system off but not on some later cars are it would fail the emmisions for the mot. I'm not sure but thought that only injection cars have lambada sensors??

Thats not quite true If your car is fitted with a old engine (pre cat) you do not need to have one fitted.
