I'm just about to start my rebuild (big ends, main bearings, thrust washers, piston rings, new race cam, etc etc etc) - I'll be lube-ing the cam and shells etc with redline build lube, what is a good oil to use for a break-in period? maximum protection etc? something with a high ZDDP content i assume?

With honed bores and new rings - maximum protection is just what you don't want. You need to knock the peaks of the honing and settle the rings down - too sedate a drive together with friction inhibitors will cause problems.

Yes, mineral 20w50 with high ZDDP content such as comma sonic 20w50.
Avoid synth oils and 'classic range' oils.
