They are pretty fancy Gauges mate, I've not seen (or paid notice) them before.
What brand are they and what senders do they use?

Not expensive at all.
Be curious to see how accurate they are, though seem streets ahead of the temp gauge you had. I'd dare say they could also be calibrated fairly easy too.

What coolant hose setup would be best?
1(currently): heater takeoff on the head goes through the inlet manifold into the Bottom hose. This serves as the bypass as well
2 same as 1, but with a valve, to close off the bypass after the engine warmed up
3: blank the heater Outlet and fit my plain Bottom hose again
In dont have a heater matrix :)
Oh I do love to 'pick a winner'......
I'd suggest sticking with option 1 so you can get some warmth in to the Inlet Manifold. While not the best way for HP, it is best for Economy and Emissions.

fit a reducer in the pipe rather than a tap. so it still flows water.
I may also be tempted to fit the heater matrix in the engine bay with a switched 12V PC fan (or two).
