I'm going to use a dremel with cutting disc to cut my arches, a job I'm scared to do.

Remember that at the front, as well as bending the metal to make a new flange, you will need to replace the stiffner at the joint between wing and A panel or you will get excessive flexing, which will lead to all sorts of problems including cracking of the new arches and/or wings, and accelerated corrosion of the seams in the area. A lot of people seemingly don't bother and a few years later will be wondering why they are having to do repairs. The ideal way to do it is to get a pair of Sport Pack arch edges and a cutting template. The edge strips get welded in and keep everything nice and rigid, effectively fitting a new flange. I don't know if they will be suitable for your new arches, depending on which you have.

You can easily test by hand pressure near the top of the arch whether stiffness us somewhat lacking. The time to fix it is before fitting the GRP arches and definitely before painting.
