edited my original post. As don't want to start a conversation,
Haven't been on this forum for sometime. Reminded why.

Make sure on the v5 on pickups state PLG and not CDV or LGV .
.
You can have this amended.

What does it say on the V5 in terms of vehicle class?

 

As it's car derived I'm not sure they're correct to fine you

I'm very confused by all this - you were caught breaking the law.

You knew the maximum speed limit (60 for a car, LGV or car derived van, & 50 for vans). You CHOSE to ignore it, & now you're whingeing about it because the mobile camera unit was in a 'sneaky' place. So what!.... - if there's a spate of vicious muggings of OAPs & the police use covert surveillance to catch the perpetrator should he be let off because it was 'sneaky'?

 

If you had been in your pick up you still would have been fined. The maximum speed limit for for cars/CDV/LGV on that road was 60mph, 1-10mph over that speed is a Band A fine. 

 

Is it worth fitting a vtec in a Mini worth it? On most levels probably not.

Then again is it worth spending a humongous amount of time, effort, & money restoring a Mini? to most people probably not -but it doesn't stop us from doing it.
