Am I ok to cut the front end off before bracing the inside?

Yes if by front end you mean Front panel, wings and A panels. The scuttle can come off as well. Be wary about replacing full inner wings etc without bracing. You should be ok.
will I be able to remove the inners up to the bulkhead line?

If you mean up to the shock absorber mounts then you will be fine.

Remember the more metal you take off the more things flex.

Having just completed the metalwork on my current project I would have to agree with others about replacing the entire floor!

The one thing I will take away from my project is make the job as easy as possible for yourself. Not only will you save time, you'll enjoy it more and most probably end up with a better Mini as a result

For anyone who has ever done it, I assume you need to do a fair amount of fettling to trim all the edges correctly and ensure it fits nicely & square?

How do you jig up / stand the shell to bring the floor up into place? something like this?:
