For restorations I would recommend speaking to The Mini Works in Edinburgh or Dirty Hands Garage Kirkcaldy.

For engines try either of above or McDonald Minis if it's an auto box.

For engine machining work I can recommend JEM Engines in Lauriston, just outside Falkirk. Ask for Peter.

There are other specialist engineering shops, depends on what you are needing done.

I forgot about Jem engines, a few stock car guys use them for machine work, also Agra in Dundee

I’ve used Agra for VW / AC crank /clutch / flywheel / rods balancing a couple of times .. but that was all they did for me.
I don’t know enough about Mini tuning (yet) so am looking for a company who knows what they are doing re mini head and block machining.

JEM Engines will be able to carry out all of the usual engine reconditioning work such as boring, grinding, resurfacing, etc. In my experience they are very good with older engines. Like all machine shops you have to provide clear instructions on exactly what you want done.

If you're planning cylinder head porting modifications as part of your engine tuning then you will need to look further afield, as I'm not aware of anyone in Scotland who has made a name for themselves. Would suggest checking out Turbo Phil on this forum, he is just down the road in Cumbria.
