what's wrong with doing the floor first and then the door steps, so long as the door steps are only cut out after the floor is back in?Defo do the door steps first, something else to add a bit of rigidity to the frame even if you are bracing the car.

Personally thats where i would start first. Its an original starting point so that dimension should be spot on from the beginning.
Is it the right way?? well for me i would be happier doing that. Remember what you are putting in place is not original material. The presses have seen better days so a small error could only compound things further along.
