Would there be any performance gains on swapping my Sprite ECU with a Cooper ECU?

The other difference in the two is the the Cooper has a different cam. I was wondering if a SW5-i cam with the Cooper ECU would make much difference?

The compression ratio was lower for the Sprite too.
I don't know if you'd get any benefit by just changing the ECU and nothing else.

For straight forward bolt-on mods for an SPI without removing the engine, If you go for a modified cylinder head with same compression ratio as a Cooper, 1.5 roller rockers, K&N air filter and a good quality LCB manifold with a 1.75" RC40 (or similar)exhaust system you should notice quite a difference.
If you then fit the Cooper ECU this will accommodate more for the fueling and ignition for the above mods than your current ECU.
By fitting a Cooper ECU on its own without the above mods, I don't think you'll get a great deal from it
