Try going to a solid disc, I appreciate what it is you are doing with the car and how hard you would be on the brakes, but I think you'll find a solid disc and matching drive flange would be up to the task.

You might find some useful info in this thread.
Vented discs only increase the track width by about 1/2" (1/4" per side) over 7.5" or 8.4" solid discs. You could convert to solid discs as mentioned above or possibly modify the 8.4" vented discs as KAD do for their 7.9" setup to allow the use of 8.4" mini drive flanges. This moves the disc and caliper towards the hub by about 1/4". I don't know if you can do this modification and still use metro calipers or whether you need to use KAD calipers.
The mod involves turning 80thou from the inside face of the disc bell, this allows the disc to clear the hub carrier 'nose'. Then fit the disc to a mini drive flange- the mounting bolt holes need enlarging slightly from 3/8" to 10mm. The inner face of the disc may just foul the steering arm - mine didn't but KAD say you may need to file a little off the arm for clearance. You then need the appropriate thickness spacers and longer, correct material spec bolts to mount the calipers.
KAD supply the mounting hardware with their calipers and can also supply the discs already modified.
As mentioned, I don't know if this mod is possible with standard calipers, they may foul the mini drive flanges as they are a different shape to the turbo ones and the calipers may foul the tie bars on full lock.
I run the KAD 7.9" vented version with minispares heavy duty adjustable tie bars and theres not a massive amount of clearance between caliper and tie bar on lock.

I've never run out of brakes, not even close.

I still have my set of the original Minspares cast alloy calipers (circa 1995) on solid discs no issues.

I run standard S solid 7.5" discs and twin-piston calipers on my rally 'S' which is FIA Group 2 and even on tarmac stage rallies have never had any problems. Originally I used the old Ferodo DS11 pads, but now the Carbon-Metallic ones from Mini Spares are fantastic. Brake fluid needs to be AP600 or equivalent (it has a new number now, but I have lots of unopened old stock).
The wider front track is mentioned, but on all Minis, the rear track is 2" narrower than the front.
