Yes you can, make sure the shell is supported by the floor pan, I usually jack the car by the subframe then use breeze block and a plank of wood to spread the load, use the Jack to lower the rear of the subframe once you loosen the tower bolts.

Hope this helps

That’s a great way of explaining it - thanks. Makes sense now.

So, a quick update. The guy I brought it off (Paul Higgs Cars) has kindly agreed to fix the problem. I will report back with the diagnosis and resolution.

Since it's turned in to a bit of a how to discussion:

Park the rear wheels on blocks (paving slabs are ideal) so you can raise the front of the car to be level on axle stands, with a substantial bit of timber as a load spreader under the floor. Take the weight of the engine on a jack (another spreader req'd) under the gearbox. That should allow you to make the room to tackle all the mountings.

It's best not to lift the whole car on the gearbox for the sake of the engine mountings.

So, bit of an update-
I’ve now put new brushes on the lower and upper engine stabilisers and also added the two bottom stabilisers to the flywheel and gearbox and.....it still clunks. Engine is not moving (it can’t!). So, to try and describe the problem...
When driving at low speed if I lift off the accelerator and then hit it quickly it feels and sounds like a clunk.
Any ideas?

Have you replaced the subframe mountings?  What did Paul Higgs Cars do?

Paul Higgs fixed an oil leak (separate problem). For the clunking he just changed the stabilisers- said the clunking was normal on minis

It most certainly is not, get the car back to them and tell them how it is!
