The PUP rolling chassis will be back in the garage in a couple of weeks freshly painted and ready to be put back together. I am paranoid about brushing past it and scratching it. Is there some sort of protecting cover anyone can recommend, only needs to be 1 sided really, I guess scratch proof isn't realistic?

when my car was freshly painted i did consider buying a load of those magnetic wing protectors garages use to protect the cars wings which the mechanics lean into the engine bay.
In the end i simply didnt bother and was incredibly careful when moving around the car. fortunately i didnt cause any scratches at all.

Scratch proof isn't realistic, it wont be scratch free.

However if you have some old duvets you can drape these over the car before you fit your cover.
