Not in Sussex but not that far away, my choice would be Mill Road Garage on the Isle of Wight, good quality work along with a photographic record all at reasonable prices.

As I’ve said elsewhere, I’ve traveled from Oxford to the IOW to get work done at Mill Road.

What I like about Ben at Mill Roads work is the bits you will never see are as neatly finished as the bits that are on display (that says it all in my mind).
