What size is the bolt, (or nut/ bolt combination in my case), that holds the Engine steady to the bulkhead. Im going to have to drill the head off the one I have cause the previous owner seems to have rounded it off. I can get the engine one off..... but the other one is going to need replaceing. Is it worth replaceing in stainless?

I have exactly the same problem on my SPI, think I may taking the same path as you on this one! If you've got a stainless then that would be my choice.

A Metric M 8 bolt would do the job, just make sure its a 10.8 tensile strength one. As for the length, measure it

and not stainless!
A2 stainless is about half as strong.

Actual size is 5/16 UNF and it's a long shank bolt ( you need the shank long enough to go all the way through the bush ). When assembling, use copper grease on the shank to enable removal at a later date.

Id be surprised if it turns up and its a long shank bolt. I ordered the 'long shank' tie bar bolts and they turned up as a standard lenght shank!! long shank bolts are a special bolt and now that the Mini has been out of production for so long now, If you can find these, they are most likely old stock. Not saying you cant get them, but just dont be surprised if it turns up and is an ordinary shank bolt.
Is a long shank really required, its not as if there is that much load on the bolt, plus its a double shear joint. I use an M 8 cap head bolt, no issue. besides the bolt is not what take the load.
5/16th inch or M 8, does it really matter?
There may well be a specific bolt for this, but a common garden bolt will do just as well.
