Is there any other engines that might fit?
Or is it 100% just xflow and twincams?

looking at using the ford zetec as comes in a 1.6 1.8 and 2.0 lt
an is easys to get and cheap to buy
and can be tuned to get good power
and is a bit more modern and has injection as standard

I think I'm write in thinking you'll still be using mini running gear? In which case I'm pretty sure tar-ox six pots wouldn't fit, and 4 pots would be plenty of stopping power! Could always use the fiesta conversion to utitlise 10" wheels!
