I like the rat look only because you wont care about rust or any damage. I think you should go for the shiny Mini because it's too nice already to turn into a rat-mini. If it was extremely rough then stick with it, but I think you shouldn't purposely ruin it.
Should I Go Rat Look?

Dont do it as anything you do will be 'forced'.. save the nice one and buy a shagged old shell, restore that and leave it in primer with unfinished welds etc. Alot of people are going round calling their cars 'rat' and they are nothing more than a rusty bonnet and stuff slapped on straight out of a packet.
Listen to this man! Rat look is absolute crap. A ratty car is completely different, patina looks incredible, but putting effort into it is just daft

Forced rat is like trying so hard to be cool at school, that you end up with the reverse effect. (imo of course )

I personally wouldnt look at other minis for your inspiration. I dont want to sound harsh on the 'mini community' but it is hardly a place of great innovation or trend setting. There is only a few mini owners i see on here whom i would call the 'avant-garde' and are trying new things. Rat look is great if done right, however very few forced rats come out well in my opion (just looks at rat-look.com).
I love ratty cars, and people who push the boundries, but i also know when a car is too nice to forcefully put a sander to and start covering in rust-look paint. I'd restore what you have but do it in a way which is unique to you, then you'll end up with a car just as striking as a lot of the well-done rats out there.
