whats a stage 3 head -polished and ported bigger valves fitted ?? help please

Depends, general understanding would be serious port & polish work done, 35-36mm inlet valves, 29mm outlet vales, 'flowed' valves and valveguides, usually go with double valve springs as well. Varies per seller though.

You would be best off specifying what you want done, rather than saying 'stage x'. You know what will be done (or rather should be) and no chance of misunderstanding stages.. Different companies have different stages..
