Im thinking of buying an engine stand while i rebuild my mini. Are they easy to bolt on? Is it work just using the crane to hold the engine.

Just using a crane is an absolute pain, the engine tends to spin around, and the crane isn't designed for it.
Engine stands can bolt in many places, favourite is fuel pump studs, quite easy if you get one with correctly spaced holes.

i have just bought one and also unsure on where to bolt it, will the two fuel pump bolts be strong enough? for the whole engine, including box and head?

I've not done it myself, built mine on a pallet, however I remember a discussion about this before that mentioned using those holes.
Other advantage is nothing else bolts on round there.

mines bolted there
my machines uses the alternator bolts but has a jig to fit them
