It should do - not a problem for Mokes or other cars without side glass.

whats the difference to just having them down all the time?

some of these kit cars have no side windows...

If you mean the side (door) windows then it'll not be an MOT point, not much fun if it's cold or raining on the way there though.

I used to have a SCAMP and took it for MOT twice with no doors or roof!
I would say it should be fine.
Might be a bit chilly though!
