You could try some condensation absorbing boxes inside the car.

i have to keep it outside aswell, dont have the luxuries of a garage unfortunately.

That air dry thing seems to be a winner. Regenerated by drying thoroughly on a radiator. Think I may invest in a couple of them myself.

but first of all, check for any leaks (doors, windscreen) are farily common to minis..

Even the roof lining was dripping in condensation! When I got in, I was looking at the amount of condensation on the windows when I shut the door - then got a lovely (NOT!) cold shower!
I found the carpet was soaked in the passenger footwell as the water was getting past the door seal. I took the carpet out and stuck it in the bath for a couple of days to dry out (I showered instead!!). Soaked up water in footwell with paper and since the new door seal has been fitted, it's been fine.
If you need a new door seal, get the proper mini one and not just a length of run-of-the-mill door rubber. The mini one has two small cut-outs in it which line up with two small channels in the doorstep. Also make sure the joint is at the bottom of the door and not the top (as my driver's side one was!).
I have just bought a bag of kitty litter and I have got two old pillowcases and put half in each and sewn them up. They will live under the rear seat.
