Its definitely been done in the back of a pickup.
16v Clicky
As has been said though, it is quite a large engine, you may be better going for something else that is lighter, k series, honda, 1.6 vaux would be lighter and are more powerful/could be tuned.

ive fitted a citroen ax gt engine to mine [the same as a peugeot 205 xs] and its a belter, alloy construction and 1360cc with a twin choke carb
as standard. check out the performance figures for the xs against the gti if you dont believe me, theres not that much in it,especialy
mid range. someone on here must have owned/driven a 205 xs or ax gt at some time, dont just take my word for it !!!

The October 2000 issue of Mini Magazine (http://www.minimag.co.uk) features Ken Andrew's Mini based on a Peugeot 205 1.9 GTi engine giving around 130 BHP.
The original car is a 1973 Mini 1000 reinforced with 2 by 2 box section steel welded into the floor for strengthening. The additional strength permits the fitting of the Peugeot front and rear sub-frames complete with suspension and running gear.
As the Mini front is the standard size (a steel flip-front) Ken has had to resort to positioning the radiator in the boot of the car which unfortunately means for now that he has to run it with the boot open! The radiator is sourced from a Ford Granada together with the corresponding fan housing mounted where the spare wheel used to go. There seems to be no problem with the standard water pump running the coolant the extra distance.
The suspension is taken care of by MacPherson struts from an Escort XR3 which slotted in easily and fitted better than the Peugeot units as height is restricted by the Mini's wings. Bars are used to strengthen the top of the struts and these are tied into a 6-point roll-cage.
The electrics are a combination of the Peugeot and Mini wiring looms. The brakes and clutch hydraulics are also combinations of the original Mini parts and the Peugeot's.

205 xs 1.4 0 to 60 9.4, top speed 106, 50 to 70 5.7, standing quarter 17.2, 32.6 mpg [85 bhp]
205 gti 1.6 0 to 60 8.7, top speed 122, 50 to 70 5.3, standing quarter 17.4, 29.9 mpg [115 bhp]
205 gti 1.9 0 to 60 7.8, top speed 120, 50 to 70 4.9, standing quarter 16.3, 28.1 mpg [130 bhp]
citroen ax gt 0 to 60 9.0, top speed 107, 50 to 70 5.3, standing quarter 16.8, 30.4 mpg [85 bhp, the same engine as the 205xs but lighter body]
as you can see, the 1360 cc 205/ax loses out to 60 mph [just] and top speed, but in real world driving
50 to 70 and standing quarter mile, its just as good if not better than the 115 bhp 1.6 gti,
plus its a smaller, lighter engine and a lot easier to fit into a mini!!
for comparison here are the same figures for a mini city, mg metro and mg metro turbo from the same mag.
mini city 1.0 0 to 60 17.5, top speed 86, 50 to 70 13.9, standing quarter 20.8, 40.6mpg [40bhp]
mgmetro1.3 0 to 60 12.2, top speed 100, 50 to 70 8.6, standing quarter 18.6, 38.8mpg [72bhp]
metro turbo 0 to 60 9.4, top speed 110, 50 to 70 6.8, standing quarter 17.0, 30.3mpg [92 bhp ?]
