A second hand Cooper S 7.9 system goes for 350 to 400 quid, a second hand 8.4 can be picked up for 30-40 quid. Doesn't that make it overpriced? There's a 200 quid difference in the new stuff too.

7.5 were only fitted to Cooper 'S' and 1275GTs in the UK
Mini spares sell a kit to convert from 8.4s to 7.5s for about £300
The last 2 sets of 7.5 I have cost less than £50, they did need work but less than £100 spent on them.
Also having a 7.5 set on your car will increase its value when you sell it.

Yes, thank you, I know. Therefore second hand Cooper S kits are rarer and would be more expensive but........new kits are now being made in both sizes....why the price difference?8.4 were fitted to all mini's after 1986ish

We are talking about the same thing here aren't we? There is a difference between Cooper and Cooper S disc brakes. Cooper set ups were rubbish and can be sourced for around 50 quid but the cheapest S ones I have ever seen in the last 3 years was 250, so well done if you got some of those for 50 notes.
Most people I know, who have them seem to keep their 7.5 disc set up when selling their cars to put on the next project!

I don't mean Cooper discs which are 7.0.
I have just got a set of 7.5s on a Scamp, this cost me petrol money to collect the car, last year I got a Mini estate which had them on and that only cost petrol money.

Looking at the photo the area that is pointed at, looks very close to the cylinder. Have you a clearer photo, or a link to where KC says this?
You have to remember that a lot of the people on sites have little knowedge of mechanics, let alone engineering. Just to say grind a caliper, is a little dangerous,
