How Hard Is It To Convert External To Internal Bonnet Release?

As long as the internal bonnet release kit is complete (cable, cable mounting bracket and the catch for the slam panel) then yes that will do the trick.

It's pretty straight forward. I did it myself - fitting an internal bonnet release

I made one for my mini, just use a bike brake cable, and remember to make a plate on the inside of the grill to cover the origional hole to get to the release catch. Stops little fingers getting in!!
