Starts fine...and sits around 1k when idling.. but very quickly starts to drop and then recover then drop again, often stalling. I notice when applying rev's while at the lights etc there is occasional flat spots where it chokes a little rather than building up.
Where would I look first to try and sort?

Ok... had a report back from the garage about the Mini...
He says its running too rich but unfortunatly can't get the garage diagnosis machine to communicate with the mini.
He's going to try a coolant temp sensor to make sure its not that.

Will report back when I know more! :D

It looks like the replacement coolant sensor has done the trick with the crap revs and stalling... running like a dream at the moment...
