If you are just fitting the one sub that alpine amp will do fine and its a very good price too.

yeah it could handle it but it wouldn't sound as good I dont think

The sub above, 2 factory standard speakers on the parcel shelf and the amplifier in the above link, what do u guys think this will sound like? Will it be noticibly more bass?
Will the sub also take the bass from the speakers ive got at the moment?

You will get more bass with the sub

Yoor other speakers will still get all the range of frequencies from the head unit.

I would still go for some speakers up front even if they are just standradard speakers.

Use something like this:

Then the sound will be more even around the car.

What is the difference between using a ported enclosure and a sealed 1? This setup is shown on the minifinity website in a sealed enclosure, would adding a hole to the sub enclosere make it sound any better?

To port a box is a little more complicated than 'adding a hole' lol,

ported boxes are generally larger than a sealed, if designed and built properly they can sound very good, i prefer the sound of a sub in a ported over a sealed any day but its so much harder to get right, hence the reason most people opt for sealed.

With small subs i'd put them in a sealed box anyway as they should perform better, pus there probably aint enough space under the bench to fit a ported box.

Is it possible to seperate the bass from the standard speakers on the parcel shelf and my sub? If so how can i do this?

if you have a head unit with pre out for a sub or just 2channel preouts yes,
a sub pre out will only pass bass frequencies to the amp.

if you have pre outs you will need an amp with at least a bass pass crossover
you can get these from halfords or maplins for about 10quid if your amp doesnt have a built in function,

then really your shelf speaker want only high or at most mid bass running through them.

again from the fore mentioned stores you can get mid and treble crossovers
this will help your speakers preduce a much clearer sound and higher volume capacity

Use a cross over
this will seperate tweeters, mid range and bass
or a 2 way will seperate bass mid/tweets.

Just connect to the speaker cable and it gives you seperate outputs for each part of the sound.
about £10 upwards depending on spec..
have a look at www.maplin.co.uk clicky just type in crossover into the search box.
