I have a standard 1999 mpi non sportspack.

At the minute i only have the clock in the dash.

Ive bought a smiths volt gauge to go next to the clock.

Ive moved the dash out slightly and the clock is connected with a plug.

How are the extra sportspack gauges connected?

And is there a harness i can buy that will simply allow me to plug in the volt meter too?

The sportspack gauges are connected with a custom loom. you could buy one, and simply remove the part of yours with one plug, and replace with one with 3 plugs.

This now depends on what version of the volt meter you have bought - like the description states, this is only good for <1999, however they are pretty simple to modify to work - its only a =Ve -Ve and bulb holder...
