Everything engine-wise has been fine recently until today about a minute after setting off on my journey the engine was almost dying whenever I tried to accelerate. The tachometer was jumping between 0 and about 1.5 k, and the engine itself was almost stalling but definitely wasn't at 0 itself as I was still trundling along in gear. It eventually stalled and I pulled over for a while.

Upon starting again, the car is drivable, but at low speed it still tries to stall and the tachometer still flicks between the true reading and 0. At high speed, the tachometer varies by about 1.5 k - 2 k, and the engine also varies slightly *as if it's stalling but recovering straight away* (but definitely not by as much as the tachometer is reporting). This only happens about 50% of the time - the other 50% of the time everything seems perfectly smooth. The performance is still fairly good - I went out for a quick blast to test and other than the varying tachometer and slightly varying engine speed it still pulled well.

It seems to idle fine, the problems only start when trying to put load on it.

Any ideas?

A good description of the tachometer's behaviour might be that the needle is "bouncing".

This turned out to be loose wiring to the ignition coil. I haven't fixed it properly yet, but pushing the wires further into the plastic cover of each spade connector has completely fixed the misfiring.
