You certainly can, I just sold my mate mine and he had no worries going from the 2 to 3 clock setup. To keep your accurate mileage etc. you can actually detach the tachometer and stick it beside your two existing clocks (though you might not want to if the ones you have arn't that colour)
Aside from a 3 clock binnacle you'll need the longer bracket. Thats about it

you can actually take of the facias, its only 2 little screws and you need to take the needle off which can be done with a fork! so you can keep them all the same colour like i did when i did mine! you may have to alter the screw on the tacho because of the wasted spark system on the mpi or something!
edit, just saw that its from a 1995 cooper anyway! should just slot back in! if you only have a 2 clock set up the 2 wires should already be in place, just hidden around the steering column area! a black and white cable with a bullet connector, and then a spade connector, cant remember what colour it is, might be red but cant remember for sure!
