In theory it should be alot less to insure 2 differnt minis as you can only drive 1 at a time, is this the case? or do you have to pay full price for both?

Except for NCD allowance, I think you would pay full premium on both.

I have just been through the process of trying to insure two and discovered the following options....
You can go for a "multi car" policy, there are a few of these on the market now "Admirals" being the most famous because of the Fu*king annoying parrot saying "multi car ..multi car.. squark"... any way, trouble with most of the multi car policies is that they are offered by mainstream insurance companies that don't like modifications and dont do agreed vaulations and the like (basicaly all the stuff you want from mini insurance).
Another option is to insure one car with your no claims discount and then get a "mirror policy" through the same company to insure the other. The mirror policy "mirrors" your no claims discount that is use on the other car onto the second car, so long as you keep the 1st car insured with the same company then you get the NCD on the second one as well. The final option (if your car is old enough) is to get a classic car policy for the second car (designed for hobby cars that sit in the garage and only come out on sunny days) this will mean that it has limited mileage, but its a lot cheaper than a standard full policy as it takes into account that the car will not be used as often. Different insurance comanys have different definitions of what a classic is though, can be 15 or 20 years depending on the company.

With a classic policy, it's designed for a low use second car, with No NCB. In fact with Flux you don't build one up either. (which is pants !!!)
So my wife has 2 cars, with them (until next week when the MX5 will transfer to Footman James). The Cavalier is on a regular policy, with full no claims and costs her £180 fully comp and the MX5 is on a classic policy and cost her (ME) £256 Full comp.
