I'm looking to tidy up the wiring loom in my car and i'm wondering what the best thing to wrap it in would be? Just good old electricians tape or is there something a little better/neater.

Loom tape is the correct thing to use, it looks like ordinary electrical tape but is not adhesive so you have to finish the ends with a bit of adhesive tape, it also gives the loom more flexibility. Do the " branches" of the main loom first, back to the main "trunk ", then do the main trunk.
The black nylon overbraid in the last post is also excellent if you can feed the wires through it.

I'm thinking of using spiral wire binding

The spiral wrap doesn't look all that good
If you tape it be aware that as you tape it up the harness will twist in the direction of wrap and cause all manor of issues
There is a convoluted tube that is made with corresponding T's and Y pieces looks good if finished well also comes with brackets to fix it in place....
If you use just convoluted tube then you may need to overtape this is known as COT (Corregated Over Taped) just make sure that you DO NOT have wires protruding between the slit edges as it can and will cut through the wires...
