If they're the same width as mk3 gti seats then yes, however they won't be the easiest seats to make custom subframes for because of the design of the runners.

Okay cheers I need to find a picture of a gti seat now lol and yeah I know they will be hard but I got em for nothing so I'm not losing anything if I try lol cheers anyway

As far as I'm aware the interior of the Mk3 Gti and VR6 were the same dimensions...............
The seats in my Mk3 Gti are comfortable and supportive and after 15 years show ownership next to no wear. But mine's a 5 door so as for tilting forward enough for access to the rear of a Mini, I've no idea.
