You are not limited by wheels, but by tyres. Force racing wheels (www.force-raing.co.uk) will be able to supply an 8x10, but the only tyre I can think that would fit on those would be a slick.

For road use 7x10 is a wide as you can go, and even then people on here will tell you it's too wide for the tyres available.

a 6" rim with 165 tyre maximum and even then

its not realy reccomended according to some tyre charts

with the 12.s the deep dish are about 38 -40 mm ( its all on the outside plus ) not good

more sticking out

more than a 5" ultralite

be careful it can affect handling for road use

due to bumpy iregular road surfaces

speak to midland wheels they will give you the spec

for 10" wheels, i have just been all throught it myself

and decided for the 5.5" im glad i did and didnt go for 6"

TLDR:
More your wheels stick out, more stresses on the bits attached to them - steerind / suspension / etc.

You can go mad wide with spacers and huge offset wheels, but your bits will wear out quick and the handling of the car is diminished.

If it's form over function, knock yourself out. If It's all about the ride, stick to the little ones.

As Wil-H says, Force will make you wheels with about a 5" dish if you ask them nice enough but I'm not sure I'd want to drive it very fast ;D

What are you trying to achieve - fill out your arches? What are they! you might get away with dished wheels from the likes of midland,

I think they are -7 offset.

The difference between how flush my new wheels and the largest offset wheels at midland wheels will be 8mm.
