Flattened the tab washer and just cant seem to find a way of locking the shaft to undo the nut! Help!

If you are doing this with engine and box in situ, which is possible but awkward (been there, done it), you will need to put it in 4th gear and find a way of locking the engine. If I have got my rotations correct, that can be a spanner on the crankshaft pulley nut.
If the gearbox is out and partly dismantled, undo the selector forks and manually engage both first and fourth gears.

Engine and box are together but out of the car. This makes it very difficult to get it into any gear without the lever attached and working clutch

Silly question, but why are you undoing the pinion nut ? if only to change the final drive, at which point you will also need to remove the differential, which means it's a lot easier to put the gearbox into two gears at once, and I suggest reverse and 4th...
