Mine is white with a black roof, on the V5c it is registered as "white"

Just had mine MOT'd bud and the guy has put down red and white as you can guess red with white roof
I thought you can only enter one colour?

Coopers with contrasting coloured roofs (both Rover & the current BMW & versions) tend to be registered in the main body colour when new at first registration. So as far as I'm aware you declare the primary colour of the car (i.e. the the colour that covers the majority of the car). You only need to declare the car as multi coloured if you cannot truly distinguish any one colour as the primary colour (i.e.it's rainbow coloured!!)

Correct me if I'm wrong, but isn't it the individual dealer that registers a new car with the DVLA between you buying it and picking it up. So variances are probably down to however the individual dealer declared the colour to be when they registered it......& in bungles case, a dealer in Cornwall is bound to do something a bit odd!!!
I don't know about the old buff logbook days of the Mk1 Mini, but certainly since the 1970s the manufacturer printed the V55 Registration Document that identified the car, model and colour and the dealer only wrote in the new owner's details and the Registration Number [which came separately from the DVLA as a special Government document V53 ... that was a little typewritten sticky label!].
So any funny Mini colours came straight from funny Longbridge!
FWIW, my red-with-white-roof is one of those down as 'multicoloured'.
