First off.. I bought a hub kit from minispares, I got it pressed in properly, it's a taper roller bearing so the second/top bearing just pushes in by hand, put it all back on the car and the wheel doesn't spin freely at all, what could this be? - it's defiantly not the brakes adjusted too much.
Secondly - There's a slight play in the steering rack when you push either wheel towards or away from the car, as if the hub nuts were not tightened properly.. I'm not 100% sure I did tighten them fully, say I have.. What could this be?
Lastly - One of the rear brake adjusters doesn't seem to push the shoes out enough, can I just swap the adjuster? As it does look worn or is there more to it then that?

The wheel bearing MUST spin freely - is there a spacer between the bearings - or do they have a 'built in' spacer? Strip it out and double check everything. You may need to add a thin shim between the bearing centres - ball joint shim seems to work ok. Are the track rod ends worn - or perhaps the rack itself has some wear in the track rod inner joints.

Sounds like you need to follow the advise given above before you doing anything else. You said in your first post that you are not 100% certain that you have done the the hub nuts up fully.....so even if you have no mistakes with the bearings then you will need to check the hub nuts before taking the car out on the road.
