If you fit some of Minitastic's longer steering arms it will have the same effect by not allowing the wheels to pivot as much (bigger turning circle). The added bonus is your steering will be lighter which may be useful with such big wheels fitted. I havn't used Minitastic's steering arms myself so I can't vouch for them. Just an idea.

You can, with some slight difficulty, fit them without removing the rack. If you can change a rack gaiter in situ, you already have the skill, patience and almost all the knowledge to do it. Basically, undo inner end of gaiter and pull back, fit limiter, refit gaiter, and if necessary replenish lubricant. Quicker than partially dropping the subframe to get the rack out.
There is, or were, more than one design of limiter, some are just plastic (nylon?) which is perfectly adequate, others metal, and how they are fitted varies, but will be obvious once you have them in your hand. Basically they clip around the rack, behind the inner ball joints, or into the ends of the rack outer tube, so that they act to prevent the ball joints retracting hard against the outer tube on full lock.
