So i am putting a stage 1 kit on my estate soon and i know everyone says "put it on the rolling road or you are a foolish skeezer" or something like that. I have no rolling roads near me so if i am going to give it a tune myself what do i need to do and how do i go about doing that?

probably not a great idea trying to tune a carb when you don't know what your doing as you could easily make it worse, always best to pay someone in the know...

how much of an idea do you have about doing it?

I myself don't have much experience but i would be tuning it with someone who has about 20 years experience working on cars and whatnot. Is it just the carb that needs to be tuned?

As a basic you need a CO meter so you can set the mixture at 2-2.5% at idle and if you have a 12v co meter then run it up the road connected and see what sort of co you get under cruse %, and full power (4-5% co) and adjust the needle type accordingly. Get the SU Booklet on Needle Profiles is a good start.
