Best thing to do is to try it, when I ran 13's I (meaning me personally) found it better with the rears parallel. Now back on tens i've dialed in a little toe......

You should be in the Olympics with times like that - ask your headmaster to enter you for the running and jumping over things events.

I think you should leave it for now, until you complete the restoration, and then take it to a tyre dealer for a full alignment check. Using planks of wood and comparing to the curved, tapered sides of the shell is not going to tell you anything useful.

 

Or, you could make yourself a toe gauge for a rough check. It is only 2 pieces of square or rectangular tube (round is no good as you don't want rotation, but you can use flat bars and clamps instead), one of which fits snugly inside the other and can slide, with an upright arm at each end which reaches to half wheel height, and a short rod on the end, parallel to the tube. It is basically just a giant calliper. You obviously put the car on a flat surface, fit the gauge underneath, and bring the ends of the two rods up against the high point on the sidewall of the tyres. Do that at the front, make a mark where the two tubes meet, transfer to the back of the wheels, make another mark, and measure the difference.

 

With care, you will be able to set both front and rear toe sufficiently close to avoid tyre wear problems and have correct handling. You should roll the car forwards a few times so the wheels turn maybe 90 degrees each time, and make several measurements in case the wheels or tyres are a bit wonky.
