You have 2 looms in mind with a combination of both there, the mk3 wont have wiring for a speedo/rev counter in front the driver but has a single stalk and the correct switch wiring.  a mk2 loom is older still but similar, a mk4 loom will have the speedo/rev counter wiring in front the driver, but will have the twin stalk and totally different wiring for the switches.

Its easier to use a single stalk wiring harness and modify it to work the dash lights/rev counter wiring, than change a 2 binnacle in front the driver clocks, back to a mk3 single stalk loom.

Kernow - what about a Mk3 early 1275GT loom?

It was a single stalk and 3 gauge pack in front of driver in those...

Forgot that one, in the very early ones they were, only issue is where the 2 looms join might take a bit of switching about, but as its only a minor job to entent the dash wiring either a mk3/early 1275 should do the trick. But depending on ones wiring skills you could make the modifications in less than a hour so which ever way is easiest for the OP.
