What SU carburetor is correct for my '74 Mini 1000? How do I confirm which carburetor is on my engine? It looks bigger than the SU's on my MG-TD, so I assume that it's a 1 1/2" carb.

That looks like a HS4 (1-1/2" choke) which is correct. Natty little heater on it too, did it come via Canada?
HS2's have the mounting studs at 12 & 6 o'clock; HS6 have four.

Yes, it is a Canadian Mini. I was told that Mini's were not sold in the US after 1969 because they did not comply with US bumper regulations. I bought my car from a chap in Rochester, New York. His father had purchased the car in nearby Ontario, and imported it.
Are you referring to an electric choke heater?

Minispares offers a number of HS4 rebuild kits.
1. They make reference to a Waxstat carburetor (pre-'74). My car is a '74...how can I confirm if it is Waxstat or not?
2. They also make reference to a plain vs. air valve throttle plate. I presume that I simply need to inspect my carb to confirm that feature.
3. They also make reference to a "red jet". It features a red band in the website image. Do I need to inspect my carb for that feature as well?

In regards to number 2 on your list. An air valve throttle plate (or butterfly as they are also referred to as) is a plate that has a little hole with a sprung valve on it that opens under certain conditions. The plain is obviously just a flat one, no valve. The general opinion is that the valved ones are not so great as they just cause an obstacle and restriction in the airflow of the carb due to the valve that sticks up off the plate and some people mod the plate to remove the valve and solder up the hole.
I am unsure about the waxstat differences so cant help you there.

One on the right is waxstat, left is a fixed jet
right is one with air valve (poppet valve)
