There are several online parts catalogues. With at least Moss-Europe's, there's a table at the back that cross references the part numbers to thread type.

Actually, there are probably only about a dozen nut types. There will be far more bolts, as they come in different lengths.
Remember that it is not only size that must be specified, the "grade" of the nut or bolt (i.e. strength properties of the steel) is VITALLY important and you do not automatically get the correct items unless you ask for them. Except where otherwise specified, all bolts MUST be grade 8.8 (10.9 is usually an acceptable substitute, 12,9, although seemingly stronger, is not) and all nuts MUST be grade 8, on the ISO system. That would be grade 5 on the US system, but a UK/ISO grade 5 is basically mild steel, dangerously weak and not to be used on any car.
1/4" UNF, 5/16" UNF, 3/8" UNF and possibly some 5/16" UNC will cover about 95% of the nuts. There was an admixture of Metric on later Minis, e.g. engine mount to subframe would be M8 instead of 5/16" UNF, but frankly I would simplify life by using UNF every time, ONE spanner size to use, so no needlessly stripped heads, ONE size of nut to stock, and a 5/16" UNF is very slightly stronger than an M8, due to the larger root diameter of the finer thread.
Stainless must not be used on any structural item, as neither A2 nor A4 grades have the necessary fatigue tolerance.
Beware of apparent bargains such as bolt kits sold on Fleabay. Often the sellers are completely irresponsible and are selling stuff that is not actually high tensile, even if it seems to be marked as such. There are very many bogus parts, mostly of Chinese origin, in circulation, and it is a serious problem in many industries. ALWAYS use a reputable nut and bolt stockist for your supplies. Doing so may save lives.

What size nuts are needed for mk2 rear lights to attach to the body?
3/16 UNF ( I think)

It is a special, 10 UNF * 3/8" dia head. It is also a place where a stainless or brass nut would be acceptable, as it is non-structural.
