Whilst taking my newly-acquired centre speedo apart I have been quite meticulous and have taken photos along the way so I know where everything goes when I put it back together. However, I have looked through my pics and I can't find any of where the little needle spring goes (It's the black pointy bit on top of the white plastic lever). This lever sits on the side of the drive and the "hammer" part sits on the cogged part of the mileometer. I know the needle spring sits on/around here but I just can't figure out where.

If anyone has a picture showing this particular area I'd be most grateful.

That is the pawl mechanism for the odometer.

The speedometer input shaft has a worm gear on it that drives a little pinion gear.  The metal shaft of the pinion gear passes through the metal frame of the speedometer.  On the far end of the gear shaft is a smaller diameter shaft end.  The hole in the white plastic part goes over that small diameter shaft followed by the (oval) metal spring clip shown in your picture.  The long, skinny metal spring finger goes through the boxy hole at the 90 degree corner of the white plastic part.  I forget how it is oriented.  However, the spring finger provides a preload to the plastic pawl to hold it in the right position (against the gear on the end of the odometer assembly).  Your odometer will not work without these parts installed.

Google for the 27 page PDF by Anthony Rhodes.  It will be titled something like "Repairing Jaeger and Smiths Speedometers".  Review the pictures in it and read through it a few times.  It will give you and idea where these parts go and how they work together.
