Horn on the earlier cars was fitted on the slam panel drivers side of the centre catch and earthed if a single terminal horn through the bracket, ot the 2 terminal horn had a short wire from the 2nd earth terminal to the mounting bolt. if you have room there its where the horn wire comes out the loom.

I thought that the horn was earthed by the horn button itself into the steering column. In other words, the horn itself is insulated with one wire (in) going from the fuse, and the other wire (out) going to the horn button.

is the horn a single terminal or a twin terminal type, the single is earthed to the bodywork the twin terminal is earthed back via the stalk

Depends on the model year starting with the MK3 the mk4s 88-had a single wire out Purple/black which fed 12v to the horn from the stalk and the horn was earthed, the very first earlier mk1/2s had a purple 12v feed to the horn and a wire back inside the car, the early cars had a horn push which just earthed out blowing the horn, but they reverted to the Purple/black 12v feed out with the introduction of the stalk on the mk3 wich did dip/main beam as well.
I put the basic way of wiring either a 1/2 terminal horn up which could be used if the horns mounted anywhere on the car.

It's the 2 pin horn so just need to earth it, what amp wire should I use?!

The later cars used a horn relay, in which the horn push would indeed be a switch to earth for the control side of that relay. The relay would then provide +12V to the horn unit.
What may cause some confusion is that fact that the wire from the push (purple/black) is a switch earth whilst the wire to the horn (also purpe/black) is switched 12V!
