My Mini has got rear HiLo's and I'll probably be fitting fronts in the near future.

How would I put this on my insurance? Or could I leave them off, not declared? If it's any help, it will be going on a multi car policy with Admiral.

Yes, you need to inform your insurers of ANY modifications you make to your Mini.

The insurers need to be made aware of anything that takes the car away from standard. 

I would have thought adjustable suspension would be pretty high up on the list of mods to declare.
