there seems to be a difference of opinion when it comes to fitting new valve guides and if you need to re cut the valve seats

the pic below is a head with new guides just pressed in

the light from the torch really highlights the gap and I don't think a bit of lapping is gonna bring that back!!

I was amazed at that gap

Yes, if you put in new guides you need to recut the valve seats to be aligned with them.

Yes, valve seats need to be re-cut, and as you say this highligts the issue...

 

Many will say you will get away with it, and you will for a while, but any misalignment of the seat will cause the valve to wear the guide prematurely, thus you will be changing the guides again.
