just a quick question ...

 

I've just knocked the cups onto the shafts in the gearbox, 

and i was just wondering, should i be able to turn one and spin the other one at the same time?

Do you mean that when you turn one, the other goes in the opposite direction? That's what an open differential will do so it's fine. Make sure the c-clips were in place when fitted.
