I've just gotten a new-to-me Mk1, and it's got a slight issue. The push button works fine, and the motor turns over. However, just as the engine gets going, the starter disengages, and the motor dies. It takes a bunch of tries to actually get it to started properly. Is this something that can be adjusted, or does my starter need replacing?

It should disengage once the engine gets faster than the starter. With an inertia starter this is a noisy process encouraging you to let go of the key (or equivalent). If it's letting go as if you took your foot off the switch, it may well be a battery or cabling issue.
As a test, you could disconnect the coil so it can't start and see if it keeps turning over.
